Sexy Spinach and Sausage Risotto

I happen to think risotto is one sexy dish.

Something about the texture, and the care with which it is prepared and the kind of delicious ingredients you can mix in (shrimp, shitake mushrooms, or in this case, sausage and spinach). It's just fabulous if you ask me.

I have been catching up on Desperate Housewives (season 3, love it!) and in one episode the assistant manager at Scavo's Pizza prepares this divine looking spinach risotto and since then, risotto has been on my mind. So I hit the grocery yesterday, bought myself a big bag of Arborio rice and have committed to trying out a new recipe every week. This week I decided on Italian turkey sausage and spinach as add ins. Super easy to make but the finished product is as delicious as any dish you may have spent hours preparing. Serve with lots of chilled white wine. Enjoy!

Sexy Spinach and Sausage Risotto
(4-6 servings)

3 cups low sodium chicken broth
1 10 oz frozen package of chopped spinach
2 garlic cloves, minced.
1 small onion, minced.
3 tbsp butter
8 oz lean Italian turkey sausage, casings removed.
2 cups Arborio rice
1 cup dry white wine
1/4 cup shredded Parmesan cheese

Defrost the spinach and squeeze dry.

In a large sauce pan heat 2 tbsp of butter until foamy. Add chopped onion and garlic and saute for 3 minutes.

Add sausage and break up with spoon, cook until browned. Add rice and stir well. Cook for another two minutes and then add wine and spinach. Cook until the wine is absorbed and then continue to add the broth by the 1/2 cup and cook until evaporated - about 20 minutes.

Sprinkle 1/4 cup Parmesan on top and mix in with the last tablespoon of butter.

I made Parmesan-Pea Risotto (Weight Watchers!) on Tuesday and it was sooooo good!
