I Am The Best Girlfriend Ever

Seriously. At least for today.

A few weeks back Adam asked me if I would be able to bake some holiday treats so he could participate in a "Holiday Dessert Swap" at work. I agreed and proceeded to forget completely about it until this weekend. Then I remembered last year that a coworker's wife had come in with Cookies & Cream Truffles last year and they were such a big hit people still talk about them today. And they are simple, and require no baking. Perfect for a person who has waited to the last possible moment to throw together enough cookies for thirty people.

So I ran out to Stop and Shop on my lunch break to pick up the ingredients and then when I came home I poured myself a big ol' glass of Shiraz and went to town on those truffles. I was not kidding when I tell you how easy they are to make. But I didn't realize that just because something is EASY doesn't mean it's not TIME CONSUMING. As evident by my posting now at 10:19PM.

I should really post this over on The Pink Shoe Cookbook but you know it's NaBloPoMo and I post where I want to.

So here we go.

Cookies & Cream Truffles

1 package of Oreos
1 8 oz package of cream cheese (at room temperature)
1 package of chocolate chips (semi sweet or milk or dark or in my case white and milk chocolate swirled).

Put the Oreos in your food processor


and grind to a powder - about a minute or two.


Pour the Oreo powder into your mixer, add in the cream cheese in chunks and blend REALLY SLOWLY at first, scraping the sides, until the mixture resembles wet soil (mmmm).


Shape the wet soil/Oreo mixture into small balls and place on a cookie sheet. Chill for about an hour in the fridge.


In my case, it was almost 8 at this point and Adam had just come home from hockey so took a break from the truffles and made us a hugeass steak and cheese sub.

Okay back to truffles.

Melt your chocolate in a double boiler over low heat (Or if you are lazy like me, in a regular pot over medium-low heat)



I used the white/milk swirlies because they're pretty.

When it's all nice and melty...



...drop your chilled Oreo mixture balls into the chocolate and use a fork to coat them and pick them out. Place back on the cookie sheets and back into the fridge to chill for another half hour or so.



But it didn't end there. No, I couldn't call myself the Best Girlfriend Ever if I stopped there. So I packaged these truffles into 30 individual servings of three luscious truffles each...



And tied each one with a bow and a little tag with the recipe on it and some fine ass clipart.





Boo yeah.

And I even managed to catch most of Ellen's Really Big Show which I thought sucked except for the first act (the lady who can change her dress in 1 second), Lyle Lovett, and this dude who can really do no wrong


WHEW and now it's time to collapse in bed.

I give to you my eternal thanks for sharing that recipe with us. I do not have a food processor in which to thoroughly destroy the oreos, but I promise someday I will make these. YUM.

Definitely Best Girlfriend Ever. He'd better get you something truly fantastic for Christmas. ;-)
