Since a lot of people have been sharing recipes and calorie-cutting tricks with me since I announced my new quest to be more healthy, I thought I would share with you two items that have gotten me through the past week (and helped me lose 5 lbs so far!)that are both DELICIOUS and low point/calorie.
1) Weight Watchers Vegetable Soup. I have this for lunch every other day and it is SO yummy. Something about the crisp air just compels me to eat soup and this one has ZERO (that's right, 0) points per serving, is very tasty, easy to make and freezes excellently. I made a double batch on Sunday night and then poured it into a bunch of small Gladware containers and froze them, that way I can just grab one on my way out the door, or stick it in the microwave at home for 4 minutes when I'm hungry.
Weight Watchers Vegetable Soup
2/3 cup sliced carrot
1/2 cup diced onion
2 cloves garlic, minced
3 cups fat free broth (chicken, veggie or beef)
1.5 cups diced cabbage
1/2 cup green beans
1 tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1.2 cup diced zucchini
*In large saucepan sprayed with nonstick cooking spray, saute carrot, onion and garlic over low heat until softened. About 10 minutes
*Add broth, cabbage, green beans, tomato paste, herbs and salt; bring to a boil. Lower heat and simmer covered for about 15-20 minutes or until beans are tender
*Stir in zucchini and heat 3-4 minutes. Makes four 1 cup servings.
Per serving: 42 calories, 0 g fat, 2 g fiber.
2)Stop & Shop makes these jarred fruit with Splenda that are SO GOOD. The sliced peaches seriously taste almost sinful and they are only 1 pt for about a 1/2 cup. This isn't the same as the canned fuit...they in big plastic jars with dark blue lids. Look for the "Made with Splenda" sticker so you know you have the right ones. I have them for dessert ( I am the kind of person who NEEDS to have something sweet after dinner) and a serving of these satisfies that craving just fine!

That's the soup I was talking about!
it's the bomb. i am going to start making a double batch a weekend!
and erin, that is a great tip!
Sounds yummy!
Thanks for the recipies! I really need to lose the 5 pds I packed on in the last couple months. Ideally, I should lose 10 pounds, but I'm not going to set my goals too high.
Been wondering if I should do WW. Everyone I know seems to be on the bandwagon...(o;
nicky, i think you look perfect. but if you really want to lose 10 lbs definitely do WW! there are a bunch of girls in my class who look thin and are just in it to learn some new eating habits/lose 10-12 lbs. it really works.
That looks delish!! Thanks Sarah! Will most definitely try it this weekend!
I don't know about perfect, but thank you my dear! I know I'm not over the weight bracket for my height just yet, but I am at the top of my range. I'm worried about fitting into my wedding gown (they ordered me a size smaller) and not too thrilled with the muffin top I'm sporting right now.
I probably just need to curb eating out and eating junk for a while. Everyone on the planet seemed to have a b-day or event over the last month and a half. It was impossible to escape all the food. And the prospect of the holidays coming up is filling my wardrobe with fear. LOL.
Anyway, I'm still trying your soup recipe!
awesome! a good recipe like that will come in handy :)
