aaaaaaaand it's recipe time (again).

i made these last night and they came out so good that i brought one into work for lunch and everyone is like "omg is that lean cuisine!?" which i'm not sure is a compliment but in any case everyone agrees it smells and looks GOOD. and i can attest to the fact that they taste good. and they are good for you (mostly)

Sarah's Stuffed Green Peppers



6 green bell peppers
1 lb of ground turkey
one small onion
2 cups minute-rice
2.5 cups tomato sauce (any kind. i like tomato basil)
shredded low fat mozzarella cheese.
salt and pepper

*set a large pot of water to boil, and while it is heating up, cut the tops off 5 of the peppers and seed them. when the water is boiling, drop in the peppers and boil for 10 minutes.

*preheat oven to 350

* chop up the onion and the remaning pepper and combine it with the ground turkey in a bowl. mix in 1 tsp salt and one tsp pepper.

* heat large skillet and add turkey+onion+pepper mixture. Brown for 10 minutes (until Turkey is mostly cooked).

*pour 1.5 cups tomato sauce and all the rice in the pan and mix together for 5 minutes. remove from heat.

* place drained peppers in a baking dish and put a liberal amount of the turkey in each one. cover with remaining tomato sauce, and make a foil tent over the dish. bake at 350 for 20 minutes.

*after 20 minutes, sprinkle the mozarella liberally on top of the peppers, remove the foil tent and bake again for another 10-15 minutes, until the cheese begins to brown.

OMG, those sound so good...

(I think I've had too much to drink--I just got back from work--and I've got that drunk-hunger. But I would totally eat those when I haven't been drinking...they sound delish!)
